Sweet Potato Toast with Nut Butter

Sweet Potato Toast with Nut ButterIngredients

  • 1 Avocado
  • 1 Sweet Potato
  • 1 – 2 Tbs Olive oil
  • 1/4 cup your favorite Barley+ Toasted Muesli
  • Salt
  • Cracked Black Pepper
  • Smoked Paprika
  • Small Bunch of Fresh Mint
  • 3 Tbs Goat’s Cheese
  • 3 Tbs Ricotta
  • 12 Blueberries

Method

  1. Pre-heat oven to 400°.
  2. Wash your Sweet Potato.
  3. Cut Sweet Potato lengthwise into thin slices, about ¼ an inch thick. Coat sweet potato slices with a small amount of oil. Season with salt and pepper and place on a baking sheet with a little room between each slice.
  4. Bake for about 15-20 minutes, flip slices over and bake for another 15-20 minutes or until a fork can easily pierce the sweet potato. Don’t overcook or the sweet potato toast will become mushy.
  5. Mash 1 avocado with ¼ cup of ground Barley+ and spread on Sweet Potato. Top with Ricotta, Goats cheese, Mint and Smoked paprika. For a savory and sweet combination try adding blueberries as well!

Make 3 – 4 serves depending on the size of your Sweet Potato
