Ingredients:
- 3lb red potatoes quartered
- 1/3 cup apple cider vinegar
- 1/2 tablespoon honey
- 1 tablespoon dijon mustard
- 1/2 tablespoon minced garlic
- 1/3 cup Barley+
- 1/2 cup chopped parsley
- Salt & pepper to taste
Preparation:
- Bring a pot of salted water to boil and cook the potatoes until fork tender, about 15 minutes
- While the potatoes are cooking, prepare the dressing. Mix the vinegar, honey, mustard, garlic together, salt and pepper
- Once potatoes are cooked, drain water and toss in dressing.
- Toss in Barley+ and parsley.
- Cool before serving.
