German Style Potato salad

German Style Potato saladIngredients:

  • 3lb red potatoes quartered 
  • 1/3 cup apple cider vinegar 
  • 1/2 tablespoon honey 
  • 1 tablespoon dijon mustard 
  • 1/2 tablespoon minced garlic 
  • 1/3 cup Barley+ 
  • 1/2 cup chopped parsley 
  • Salt & pepper to taste 

Preparation:

  • Bring a pot of salted water to boil and cook the potatoes until fork tender, about 15 minutes
  • While the potatoes are cooking, prepare the dressing.  Mix the vinegar, honey, mustard, garlic together, salt and pepper
  • Once potatoes are cooked, drain water and toss in dressing.
  • Toss in Barley+ and parsley.
  • Cool before serving.
