Fourth of July Berry Crumble

Fourth of July Berry CrumbleA fruit crumble is always a crowd favorite. Place a lit sparkler on this mixed berry crumble with muesli crust for a festive Fourth of July celebration dessert.

Cook Time: 45 minutes
Total Time: 1 hour

Serves: 8

Ingredients:

Filling:

  • 4 cups sliced strawberries
  • 2 cups raspberries
  • 2 cups blueberries
  • 2 cups blackberries
  • 1/2 cup brown sugar
  • 3 tbsp cornstarch
  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 2 tbsp unsalted butter, cubed

Crumble Topping:

  • 1 1/2 cups Barley+ Cranberry & Nuts Muesli
  • 1/3 cup packed brown sugar
  • 3 tbsp all-purpose flour
  • Pinch salt
  • 1/3 cup unsalted butter, cubed
  • 3 cups vanilla ice cream

Instructions:

  1. Filling: Preheat oven to 375˚F. Toss together strawberries, raspberries, blueberries, blackberries, sugar, cornstarch, lemon zest, lemon juice, vanilla and cinnamon. Spread into greased deep 10-inch pie dish. Dot with cubed butter.
  2. Crumble Topping: Stir together muesli, sugar, flour and salt; using fingertips, cut in butter until crumbly. Sprinkle over filling. Bake for 45 to 50 minutes or until topping is golden brown and juices are bubbling. Transfer to rack; let cool completely or serve warm. Serve with vanilla ice cream.

Tip: Crumble can also be served for brunch with yogurt.
